(VANCOUVER, British Columbia April 15, 2002) -- – The Quattro team is sending postcards from kitchens all over Italy. They're on a three-week food and wine tour, stopping at Vinitaly in Verona and the country's most influential culinary regions. Inspired by the experience, upon their return the chefs at Quattro on Fourth, Gusto di Quattro in North Vancouver and Quattro at Whistler will create different regional menus every month from June through November.
Quattro owners, Antonio and Patrick Corsi took Quattro at Whistler's executive chef, Jeremie Trottier, and restaurant manager, Jay Pare, along with Gusto di Quattro's executive chef, Robert Parrott to Italy for the field trip of a lifetime.
"We’re eating and drinking our way across the country,” said Patrick Corsi when he called from Venice. “Everyone is so excited about returning to the restaurants, trying some of the recipes we’ve learned and working with renewed passion.”
In May, with the robust flavours of Latium and Tuscany’s traditional dishes still familiar, Quattro’s chefs, Robert Parrott, Jeremie Trottier and Bradford Ellis from Quattro on Fourth will begin planning menus for the Postcards From Italy promotion.
Fittingly, Postcards From Italy starts in June with cuisine from the region that Quattro knows best, Latium in central Italy. Then in July, Quattro moves to Veneto, where the illustrious port of Venice influences the cuisine. Sicily, described as paradise for the vine, dominate August’s menu. In September, Quattro will extend summer with food from Campania, home to Naples and the island of Capri. Come fall, Quattro will showcase flavours from Tuscany, and finally in November guests can enjoy the comfort food of Piedmonte, home of white Alba truffles.
