VANCOUVER, B.C. (November 1, 2007) – Visit Quattro on Fourth during the month of November and enjoy a decadent three-course truffle menu for $75 per person (plus taxes). The restaurant’s Truffle Festival culminates on Thursday, December 6, with a five-course dinner featuring rare white Alba truffles, featuring wines by Batsiolo. The evening begins at 6:30pm, tickets are $200 per person, (plus tax). Quattro at Whistler will be hosting a similar dinner on Friday, December 7. Black truffle paste and pea tartetta served with roma tomato coulis

Phyllo stuffed with brie, grilled portobello, essence of black truffle and finished with a thyme sherry cream

Chocolate truffles
The white truffles of Alba in Piedmont are valued for their powerful yet extraordinarily delicate aroma. They are expensive because production is highly limited: they grow solely in the wild and fluctuations in weather conditions can play havoc with their reproduction and growth. These luxurious truffles are best enjoyed raw, shaved paper-thin over egg dishes, plain pastas and other light foods.
