(NORTH VANCOUVER, BC) September 10, 2008 - Antonio and Patrick Corsi are pleased to announce the promotion of Nicholas Lim to the position of executive chef at Gusto di Quattro in North Vancouver. He joins general manager David Owen in leading the restaurant.
"Nik has already made a big impact at Gusto, and we're thrilled to have him leading the kitchen brigade there," said Patrick Corsi. "This little restaurant has a lot of history with our family. It's where my dad opened his first trattoria in 1980. The chef here has to understand what Quattro is all about. Nik's a young, talented chef with the heart and soul of an Italian. He fits right in with the Quattro family."
Lim's new dinner menu introduces an instinctive new direction for the restaurant. He's divided the menu into two sections: Quattro Classics and Quattro Seasonal.
"It just makes sense," says Lim. "We have guests who visit us weekly for their Spaghetti Quattro and radicchio bocconcini fix, as well as diners who want to experiment with new market fresh dishes and support local farmers and producers. This way we still hold on to our classics while emphasizing back yard cuisine with Italian flare."
Currently on offer as Quattro Seasonal are ruby beet soup with pecan brittle and caprini crème fraiche; tagliatelle pasta with, berkshire pork belly, concentrated cherry tomatoes, orange zest, chili and rapini; and glazed lamb shank, served with sautéed greens, seared polenta, marinated carrot salad. Quattro Classics include Cornish game hen, fresh herbs, garlic, pepperoncino, brick grilled; hand-made Rotolo pasta; and Gusto's unbeatable antipasto platter.
Before joining the Quattro Restaurants group as sous chef at Gusto in 2007, Lim worked for several years at as the executive sous chef the Hart House on Deer Lake with Gusto's former executive chef, Carol Chow. Coming from such a large scale operation, Lim appreciates the hands on approach that comes from working in a smaller restaurant. He also served as senior sous chef at Spectra Group's Red Door Pan Asian Grill, and previously he was executive sous chef at Caffe de Medici.
